This homemade masala recipe gives a delicious aroma and taste to your chai. It is a mixture of varied Indian spices. Nothing works best for tea lovers than a perfect cup of tea!

Ingredients
• 25 green cardamoms
• 25 cloves
• ½ tsp white pepper corns
• ½ nutmeg
• 3-4 cinnamon sticks
• 1 tbsp fennel/ saunf
• 1/4th cup ginger powder/ saunth
• 1/4th cup dried rose leaves
• 1 cup water
• 1 cup milk
• 2 tsp tea leaves
• 2 tsp sugar
Steps
• Heat a pan, add all the ingredients one by one except rose petals and ginger powder. • Adjust the flame on low and roast the spices for about 1 to 2 minutes. • Let the spices turn crisp, switch off the flame and add rose petals. Mix all the ingredients well. • Allow the spices to cool down and add them into a mixer grinder jar. Add ginger powder and grind everything into a fine powder. • For preparing tea – in a sauce pan, add milk, water, tea leaves and sugar. • Give the mixture one boil and keep stirring. Allow it to boil again for 3 to 4 minutes. • Now add 1/4th tsp chai masala and give the tea another boil. • Note – Masala is to be added in a later stage. Do not add in the start. • Serve it hot with biscuits, pakoda or your favourite evening snack. • Store the chai masala in an air-tight container. It can last up to 3 months.
