Made with a soft homemade yeast dough and a flavourful chicken filling, these rolls are crispy and golden on the outside while being soft, cheesy, and delicious inside.
The dough is prepared using flour, activated dry yeast, sugar, lukewarm water, and a little oil. After kneading, the dough is allowed to rise until it becomes light and fluffy. The filling is made by sautéing onions and corn with boiled and shredded chicken and simple seasonings. Fresh coriander or spring onions add an extra layer of flavour to the filling.
Each portion of dough is rolled flat, filled with the prepared chicken mixture and mozzarella cheese, then carefully folded and shaped into a beautiful roll. After a second resting period, the rolls are brushed with egg wash and baked until perfectly golden.
You can use milk instead of egg for brushing the rolls. The recipe can also be prepared without eggs and without an oven using a pressure cooker or deep cooking pot.

Ingredients
Half Cup Warm Water
1 Tsp Sugar
1 Tsp Dry Yeast
1& Half Cup All Purpose Flour
Little Salt
2 Tsp Oil
2 Tbsp Oil
1 Onion & 1 Green Chilli
1/4 Cup Corn
200 Gms Shredded Chicken
1 Capsicum
1 Tbsp All Purpose Flour
3/4 Cup Milk
1/2 Tsp Mixed Herbs
1 Tsp Chilli Flakes
1/2 Tsp White Pepper Powder
Little Salt
Mozzarella cheese
Parchment Paper
1 Egg Beaten

Steps
Take ½ cup lukewarm water in a bowl. The water should not be too hot. Add 1 tsp sugar and 1 tsp dry yeast. Mix well, cover, and keep aside for 10–15 minutes until the yeast becomes active
Sieve 1½ cups all purpose flour into a bowl. Add a little salt and the activated yeast mixture.
Knead the dough, adding lukewarm water little by little as required, until you get a soft dough
Add 2 tsp oil and knead again. Cover the dough and keep it in a warm place for 1 hour, or until it doubles in size.
Meanwhile, heat 2 tbsp oil in a pan. Add chopped onion and green chilli and sauté for about 2 minutes until the onion becomes soft without changing colour.
Add corn and sauté for about 1 minute until slightly softened.
Add the shredded cooked chicken and capsicum. Cook on high flame for about 1 minute while stirring
Add 1 tbsp all purpose flour, ¾ cup milk, mixed herbs, chilli flakes, white pepper powder, and salt as required. Mix everything well.
Cook on medium flame for 1–2 minutes, then cook on low flame. Continue stirring until the chicken mixture becomes completely dry.
Add fresh coriander or spring onions, mix well, turn off the flame, and allow the filling to cool.
Once the dough has risen, punch it down and knead lightly. Divide it into 8 equal portions and make dough balls. Cover and rest for 10 minutes.
Roll each dough ball into a flat bread. Place about 1 tbsp chicken filling in the centre and add mozzarella cheese.
Fold the dough from all sides to seal the filling, then roll it from the bottom towards the top to form a neat roll.
Prepare all the rolls in the same way and arrange them on a greased baking tray lined with parchment paper
Cover and let the rolls rest for 30 minutes
Brush the rolls with beaten egg and sprinkle sesame seeds on top. You can use milk instead of egg.
Bake the rolls in a preheated oven until they become golden and cooked through.
If you do not have an oven, the rolls can also be baked in a pressure cooker or deep cooking pot.
