Chicken Green Seekh Handi Recipe
Ingredients
Piece of Coal
1 Onion
4-5 Green Chillies
250 gms Minced Chicken
Salt To Taste
1 Tsp Ginger Garlic Paste
1/4th Tsp Green Cardamom Powder
1 Tsp Ghee
1/4th Tsp Chilli Flakes
1 Tbsp Roasted Gram Flour
Few Drops Of Oil
4-5 Tbsp Oil
1 Bay Leaf
2 Small Piece Cinnamon
1 Green Cardamom
4 Cloves
3 Green Cardamom
2 Chopped Onions
125 gms Boneless Chicken
Salt to taste
1 Tsp Ginger Garlic Paste
1 Cup Coriander
1/2 Cup Mint Leaves
1 Small Capsicum
6 Green Chillies
5- 6 Cashew Nuts
1 Tbsp Watermelon Seeds
3 Tbsp Curd
1 Tsp Dried Fenugreek Leaves
1/2 Cup Water
1 Tbsp Fresh Cream
1/4th Tsp Green Cardamom Powder
Steps
1. For Chicken Seekh- In a food processor, add Onion, Green Chillies, 250 gms Minced Chicken, Salt, Ginger Garlic Paste and Green Cardamom Powder. Grind everything in a proper mixture.
2. Add 1Tsp Ghee, Chilli Flakes and Roasted Gram Flour (Besan). Mix all the ingredients properly.
3. Make a well in the centre of the chicken mixture, by pushing a glass or steel cup into it. Place the hot coal inside the cup. Pour oil on the coal. It will begin to smoke. Immediately cover the bowl with the lid for half an hour.
4. Take the Chicken mixture and form a cylindrical shape Kebab by gently pressing with your fingers.
5. Grill the kebabs on grill pan until done.
6. Heat 4-5 Tbsp Oil in a pan, add Bay Leaf, Cinnamon, Black Cardamom, Cloves and Green Cardamom. Fry all the spices for a min. Add the chopped onion and fry until soft.
7. Add 125 gms Boneless Chicken Cubes, Salt and Ginger Garlic paste. Roast everything on the low flame for a minute.
8. Make the flame high and roast again for 2 to 3 minutes. Now cover the pan with lid and cook for 5 minutes on low flame.
9. In a mixer grinder, put Coriander, Mint Leaves, Capsicum, Green Chillies, Cashew Nuts, Watermelon Seeds, Curd and Dried Fenugreek Leaves. Grind everything in a fine paste.
10. Add the paste in the Chicken mixture. Mix well and let it boil. Cover the pan and let it cook for 5 minutes on low flame. Keep checking the chicken occasionally until it is cook properly and oil is separated.
11. Add grilled Chicken Seekh, Fresh Cream and Green Cardamom Powder. Cover and let it cook for 3 minutes on low flame.
12. Serve hot and flavorful Green Seekh Handi with Parathas.
