Frankie recipe using Manchurian chicken and Mayonnaise.

Chicken Mayo Manchurian Frankie
Ingredients
• For the dough:
1 cup wheat flour
1 cup all purpose flour
Salt
2 tbsp oil
2 tbsp curd
Lukewarm water
• For the stuffing marination:
250 gm boneless chicken
1 egg
2 tsp cornflour
Salt
A little black pepper powder
Some soya sauce
• 3 tbsp oil
• 1 tsp chopped garlic
• 1 tsp chopped ginger and green chillies
• 1 cup diced capsicum and onions
• salt
• ½ tsp black pepper powder
• 2 tsp soya sauce
• 1 tsp vinegar
• 1 tsp tomato ketchup
• Slurry- ½ tsp cornflour and some water
• ¼ cup water
• A little ghee
• Whisked eggs
• Some mayonnaise
Steps
1. First, we will knead the dough for the Frankie. In a bowl, combine wheat flour, all-purpose flour, Salt, oil and curd. Mix with fingers. Knead it into a dough with some Lukewarm water. The dough should be neither too hard nor too soft. Cover with a moist cloth and keep aside for an hour. 2. Next, we will prepare the marinated stuffing. Into the boneless chicken, add the following ingredients – egg, cornflour, salt, A little black pepper powder and Some soya sauce. Mix well and let it marinate for half an hour. 3. In a pan, heat 2 tbsp oil and sauté marinated the chicken on high flame for 5-8 mins. (alternatively, you can even fry it) 4. Turn off the heat and transfer it in a bowl. Set aside to cool. 5. Take the kneaded dough and make thin rotis out of it. Cook them slightly on both sides without cooking them all the way. 6. Heat 1 tbsp oil in pan. Toss in chopped garlic, ginger and green chillies. Stir around for half a min. 7. Add in diced capsicum and onions. Sauté for a minute. 8. Next, add in the chicken. With flame on high, cook for a minute. 9. For the flavouring, sprinkle some salt and add in black pepper powder, soya sauce, vinegar and tomato ketchup. Stir and cook well for 1-2 mins. 10. Pour in the cornflour slurry and ¼ cup water. Stir the mixture on high flame. 11. To assemble the roll, heat some ghee in a pan. Take the half cooked rotis and cook them brushing the ghee on both sides. 12. Over the cooked roti still in the pan, pour in some whisked eggs. Flip on the other side to allow the egg to cook. 13. Flip back up, brush some ghee over the egg side and flip and cook for a while again. Take off the flame onto a plate 14. Spread the prepared chicken Manchurian onto the egg roti. Spread a slight serving of mayonnaise onto the chicken. 15. Roll it up and cut diagonally in the centre. Serve.
