• In a bowl, add tomato ketchup, chilli sauce, mixed herbs (or oregano), white vinegar, chilli flakes. Mix them. • In a pan, add oil, chopped ginger and garlic, onion (medium-sized). Cook for a minute on low flame. • Add small pieces of boneless chicken, salt and sauté the chicken on high flame for a minute or two. • Tip – boneless chicken doesn’t require much time to get tender. Be cautious to not overcook as it may harden the chicken pieces. • Add chopped carrot, sweet corn, red and green capsicum. Cook everything on high flame for 2 to 3 minutes. • Cover with lid, turn the flame low and allow to cook for another 2 to 3 minutes. • Add the sauce we prepared in the mixture. Add black pepper powder and mix everything well. Cook for a minute. • Let the stuffing cool down. Next grate 1 cup mozzarella cheese and olives (optional). Mix well. • For Pizza box patty – Use samosa patti or samosa sheet which are easily available in the market. • Make a slurry using wheat flour and water. You may also make slurry using all purpose flour (maida). • Take 2 samosa sheet, apply slurry in the centre of one sheet and place the other sheet diagonally over it. • In the centre, place the chicken stuffing (about 2 tbsp). Fold the sheet clockwise one over the other to get a box-like shape. Apply slurry in between every layer while folding. • Make sure to cover all the four corners. Repeat the same process and make more such box patties. • Deep fry all the patties and serve with ketchup or mint chutney.
