These are seriously some of my favorite childhood snacks.
Chicken in puff is basically savory chicken turnovers or little golden brown triangles of crunchy, buttery, delicious puff wrapped around a creamy chicken filling. You can bake immediately or freeze and bake at the drop of a hat when you need a snack for the kiddos after school or an appetizer for your next book club meeting, potluck, or party. These are customizable, so feel free to add other ingredients, fresh herbs, any veggies and seasonings. Each bite is a little bit of flakey puff pastry creamy peppered chicken and it is seriously a little pocket of heaven.
They are a classic appetizer in Pakistan and other South Asian countries. You will find them served at afternoon tea, but they are also extra popular for Ramadan!

Switz Puff Pastry Square
250 grams Boneless Chicken (boiled and shredded)
1/2 cup Chicken Stock
1 & 1/2 teaspoon Corn Flour
2 tsp Butter
1 Onion chopped
2 tablespoon Carrot chopped
4 tbsp Green and Red capsicum chopped
2-3 tbsp Green part of Spring Onions chopped
Some Black Sesame Seeds
1 Green Chilli chopped
1 Egg
1 teaspoon Soya Sauce
1/2 teaspoon White Pepper powder
1/2 teaspoon Mixed Herbs

Steps
Take 250 grams of boneless chicken, boil it by adding a little salt and ginger-garlic paste. Then shred the chicken into small pieces and keep the stock aside.
The stock should be at least half cup, add 1 & 1/2 teaspoon of corn flour to the stock , mix and keep it aside.
In a pan heat 2 tablespoon of butter, when the butter starts melting add 1 chopped onion, 2 tablespoon of chopped carrot and 1 green chilli chopped. If you eat less spicy then you can avoid putting green chillies and can adjust it as per your requirement .
Now cook it by stirring for 1 minute on high flame. After cooking it for 1 minute now add the boiled and shredded chicken to this, also add 4 tbsp chopped green and red capsicum.
You can use only green capsicum also, cook on medium to high flame for 2-3 minutes by stirring.
After cooking for 2-3 minutes the stock which was kept aside with corn flour, give a mix to the stock and then pour this stock to the chicken mixture .
At this point keep the flame low, then add 1 teaspoon soya sauce, 1/2 tsp white pepper powder, 1/2 tsp Mixed Herbs and little salt.
As soya sauce also contains salt, the chicken also has in it salt, so add a little salt only, mix it thoroughly, then cook it for 2-3 minutes on high flame and keep stirring.
After cooking it for 2-3 minutes the rawness of the corn flour will finish and the all the masalas will be cooked together.
After this add 2-3 tbsp of green part of spring onions, cook for 1 minute stir and then off flame and let it cool down.
Now next step is to make the puff.
For making puff use Switz puff pastry squares, so no need to a make sheets for making the puff and kneading the dough.
These readymade puff pastry squares are perfectly designed for making awesome and soft puffs.
These puff sheets are easily available in the market, you can store them in freezer but for using it take it out from the freezer an hour before.
Each puff square is covered by parchment paper, so it is easy to take out each sheet and you we can use as much as we want and then again store it in the freezer.
Now take one pastry sheet place the chicken mixture in the middle of the pastry .
Fold it in a triangle shape or long shape and seal the edges with water and press it well.
Make the remaining puff in the same way, while you are making another one, the one which you have made should be kept covered with the cloth otherwise the puff pastry will become dry.
Now with the help of a fork press the edges of the pastry puff, by doing this the edges will seal properly and will give a good look and texture to pastry puff.
These puffs can be stored in a box in the freezer up to 15 days.
Take a baking tray, grease it with oil and place these pastry puffs on the tray.
Beat one egg , then with the help of a brush, egg wash these pastry puff .
Dip the brush in the egg and apply on the puff this process is known as egg wash to yield golden brown exterior.
If you do not eat egg instead of egg you can use milk wash as the same procedure of egg wash.
Sprinkle some black sesame seeds on the pastry puff you can use White sesame seeds, this will give a good taste and a good look to the pastry puff .
Preheat the oven for 10 minutes and then baked this pastry puff on 180 degree Celsius for 15 minutes till crisp and golden in colour.
You will see the puffs are golden colour with flaky texture in the oven while baking.
Remove it from the oven and cool it for 5 minutes.
Remove this in a plate and serve.
Serve it with any dip, chutney or ketchup.

Points to Remember *Be careful while handling the puff pastry that has not thawed completely it will tear if you fold it while it is still frozen. * while rolling out the edges be careful not to press the layers together to hard this will prevent the pastry from Rising. * Baked puffs will turns soggy when kept in the fridge so enjoy it warm.
Puff pastry sheets: You will need puff pastry sheets for this recipe, which can easily be found in almost any grocery store. Puff pastry is layers of dough that are laminated with thin layers of butter in between. It puffs and flakes up when it bakes.
Chicken breasts: Always cook chicken breasts at home for this recipe. You can boil chicken Then, shred and freeze . All you really need is shredded chicken, a homemade chicken recipe that you can prep and shred easily.
Butter: We will use a couple of tablespoons of butter to melt in a skillet to create the roux or white sauce that the chicken will simmer in.
Corn Flour: Helps thicken the filling. It is important to make a thick sauce so that it does not ooze out.
An egg: The egg wash is just a beaten egg that we will brush on top right before the chicken puff pastry goes in the oven to bake.
