This one-pot biryani is made in a pressure cooker using minimal ingredients that are easily available at home, including a special Shahi Riwayat Mutton Biryani Masala that eliminates the need for a long list of spices.
We start by sautéing mutton with ginger-garlic and green chilli paste, then cook it with tomatoes, curd, and the ready-to-use biryani masala. Optional potatoes are added to give it a hearty touch. The final layering is done with ninety percent cooked basmati rice, fried onions (birista), mint, coriander, and a splash of ghee for rich flavor. It is then steamed on dum for just ten to twelve minutes.
As a perfect accompaniment, we also show how to make a refreshing and healthy Beetroot Raita, made with boiled and grated beetroot, curd, green chilli, coriander, roasted cumin, and a pinch of salt.

Steps
1. Start Cooking the Mutton: o In a pressure cooker, heat ? cup oil. o Add 2 tbsp ginger garlic paste and 1 tbsp green chilli paste. o Add ½ kg mutton and sauté it well with the masalas for about 5 minutes.
2. Add Tomatoes & Curd: o Add 2 medium chopped tomatoes and cook until soft (about 4–5 minutes). o Then add ¼ cup whisked curd, cook and sauté for another 1–2 minutes.
3. Add Biryani Masala: o Add Shahi Rivaayat Mutton Biryani Masala (no other whole spices or extra masalas needed). o Mix and cook the masala thoroughly until the oil separates.
4. Pressure Cook the Mutton: o Add ½ cup water, close the lid, and cook until the mutton is 80% done.
5. Add Potatoes (Optional): o Once the mutton is 80% cooked, add 3 small potatoes (cut into 6 pieces). o Cook for an additional 10 minutes until both the mutton and potatoes are fully tender.
6. Final Touch to Mutton: o Add crushed birista (fried onions) from 2 medium onions, fresh coriander, mint leaves, and juice of 1 lemon (approx. 2 tbsp). o Mix well, cook for 1 minute, then switch off the flame.
Biryani Layering & Dum Cooking: 1. Layering: o In a broad heavy-bottomed pan, add 1–2 tbsp water and 1 tbsp ghee at the bottom. o Add a layer of 10% boiled basmati rice (400g total used), followed by a layer of the cooked mutton. o Spread the mutton evenly and top with the remaining rice.
2. Final Garnish: o Drizzle a little ghee, sprinkle fresh coriander, and fried onions (birista) on top.
3. Dum Cooking: o Cover tightly. Cook on high flame for 1 minute, then low flame for 10–12 minutes
Beetroot Raita (Side Dish): 1. Mix the following: o ½ cup beaten curd o 1 medium boiled and grated beetroot o 1 chopped green chilli o Chopped fresh coriander o 2 pinches roasted cumin powder o 1 pinch black salt o 2 pinches regular salt
2. Serve chilled. This raita is slightly sweet and tangy—healthy and delicious with biryani.
