2. Next, add in dried red chillies, garlic buds, ginger pieces (cut finely), cashew nuts, tomatoes and salt to taste. Mix well and stir for some time
3. Cover with a lid and cook on a low flame until the tomatoes are tender and done. This might take 10-15 mins. Turn off the flame and set aside to cool.
4. When the mixture cools down, grind it into a fine paste in the mixer.
6. Take out the paneer pieces from the pan and into the same oil, add the potatoes. Fry on high flame until they are 80% fried.
7. Add in a cup of cauliflower and half a cup of carrots. Toss them around and fry on high flame.
8. Next, add in peas and stir fry with the vegetables.
9. Cover and cook on low flame for 2-3 mins. Drain them and set them aside with the fried paneer/ cottage cheese.
10. In a pan, heat 2 tbsp of butter. Pour in the prepared paste. Stir around for some time
11. For the condiments, add in coriander powder, cumin powder, salt, and Kashmiri red chilli powder. Cook for 2-3 minutes until the spices are well incorporated into the paste.
12. Into this, add in capsicum and after stirring it in for a minute, add in the rest of the earlier fried vegetables. Mix until well combined.
13. Sprinkle dried fenugreek leaves and coriander leaves. Mix well and serve.
