Crispy Chicken Balls also known as Chicken Balls or Chicken Cheese Balls is a delicious crispy chicken and cheese balls which makes a perfect snack.
This is a recipe which you can make in bulk and freeze. So you can make them whenever you need them. If you are a vegetarian, skip the chicken and add any veggies as you like, just chop them finely and use!
Chicken balls also known as chicken cheese balls is one of the most easy and delicious snack you could make with chicken. A flavoured chicken cheese filling is shaped into balls and rolled in panko breadcrumbs or cornflakes and fried.
You can add any spice powders to flavour the chicken balls. I used Italian spices like oregano and chilli flakes. You could use Indian spices or Mexican spices as well. The best thing about this recipe is to shape the ball and put them in fridge or freezer and fry when needed!
Any good quality pizza or mozzarella is ideal for the cheese balls. Why? Because it will quickly melt while deep-frying and will give you the delicious cheese lava at the centre of the fritters.
I mostly use mozzarella cheese for this recipe. Cut it into small pieces that could easily fit inside the balls.

Peri Peri Chicken Cheese Balls
Ingredients
250 grams Chicken
1 teaspoon Ginger Garlic Paste
1 teaspoon Kashmiri Red Chilli Powder
1 teaspoon Chilli Flakes
Half teaspoon Black Salt
Half teaspoon Salt
Half teaspoon Oregano
1 teaspoon Vinegar
1 tablespoon Oil
1 medium Onion
Greens of Spring Onion
1 teaspoon Chat Masala
Half teaspoon White Pepper Powder
2 big Potatoes
1 cup Macaroni
Fresh Coriander
Green Chillies
3 to 4 tablespoon Cheddar + Mozzarella Cheese
1 teaspoon Chilli Flakes
1 cup Refined Flour
Water
Cornflakes
Steps
In a bowl take 250 grams boneless chicken, washed and cut into medium pieces, then add 1 tsp ginger garlic paste, 1 tsp Kashmiri red chilli powder, 1 tsp chilli flakes, half tsp black salt, half tsp salt, half tsp oregano, 1 tsp vinegar mix it well and keep aside for 10 to 15 minutes.
In a pan heat 1 tbsp oil, add 1 medium chopped onion, fry till soft then add the marinated chicken pieces, fry them with the onions on medium to high flame for 5 minutes, then cover and cook for 2 minutes on low flame.
After 2 minutes check if the chicken pieces are cooked, break them with the spoon and keep mashing on low flame so that the chicken gets shredded.
Then add some chopped greens of Spring onion, 1 tsp chat masala, half tsp white pepper powder keep stirring for 1 minute.
Then off the flame and let the mixture to cool down.
After the chicken mixture is cool, transfer it into a big bowl, then add 2 big mashed potatoes, 1 cup boiled macaroni, some fresh chopped coriander leaves, some chopped green chillies, 3-4 tbsp cheddar + mozzarella cheese, 1 tsp chilli flakes, little salt mix it well.
Take a small ball of the chicken mixture, flatten it on your palm, then place a small cube of Mozzarella cheese in between then roll it into a round shape ball. Prepare the remaining balls in the same manner.
Take 1 cup refined flour, add water to make a thick slurry out of it to coat the balls.
Then Dip the Cheese Balls in this slurry and coat them with crushed cornflakes.
At this point you can freeze and store these chicken cheese balls.
You can freeze these cheese chicken balls in freezer for 3 to 4 hours till it gets hard and then you can store them in any zip lock bag or box.
Heat oil in a kadai, the oil should be medium hot then fry these cheese balls till crispy on medium flame.
Serve it with any chutney, dip or ketchup.

Tips *On most occasions, you can shape them one hour before the party and keep the tray in the fridge. This trick helps to serve delicious cheese balls in no time. *You can pulse two chicken breast in the food processor to make ground chicken for cheese balls. * Before deep-frying makes sure the oil is heated to the right temperature. Else, chicken balls might not turn crisp. *If you are not deep-frying the chicken balls immediately keep them in the fridge until required.
