It is made using flour, butter and milk and is a base for many other sauce recipes. The pasta is easy to make and can be tweaked by adding veggies, chicken or shrimp.

Ingredients
• 1.250ml Water
• 2 Cups Penne Pasta
• Salt to Taste
• 1 Tsp Oil
• 1 Tbsp Oil
• 1 Tbsp Garlic
• 150 gms Boneless chicken
• Salt to Taste
• ½ Onion
• 2 Tbsp Sweet Corn
• 3 Tbsp Capsicum
• ½Tsp Mixed Herbs
• ½Tsp Chilli Flakes
• 1/2 Tsp Black Pepper
• Salt to Taste
• 4 Tbsp Butter
• 4 Tbsp All Purpose Flour
• 500ml Milk
• Salt to Taste
• 1/2 Tsp Black Pepper Powder
• 1 Tsp Chilli Flakes
• 1/2 Tsp Mixed Herbs
• 2 Cheese Slice
• 100ml Milk
Steps
• In a pot, add 1.25 litre water and boil it on high flame. Add 2 cups of penne pasta, salt to taste and oil. • Boil for 7-8 minutes until the pasta is cooked about 80%. Strain the pasta in a bowl and add them in cold water. Let them be for about 5 minutes, strain the water and remove in a bowl again. • Tip – Adding in cold water prevents the pasta from getting cooked (soggy) further. • Tip – Cut a pasta piece into 2 part using knife, to check if it is boiled well. • In a pan, add oil, chopped garlic and saute for 10-20 seconds. Now, add boneless chicken pieces, salt to taste. Cook on high flame for 2-3 minutes. • Note – we’re using olive oil, you can use any type of oil. • Add diced onion, sweet corn, capsicum and saute them for 2 minutes with chicken. Add mixed herbs or oregano, chilli flakes, black pepper powder, salt to taste. Cook for a minute and turn off the flame. • In another pan, add butter. Let it melt, add all-purpose flour. Roast the flour on low flame for 2-3 minutes. • Add milk gradually and keep stirring with another hand. Stir continuously on low flame to avoid formation of any lumps. • Add salt, black pepper powder, chilli flakes, mixed herbs or oregano. Mix well on low flame. • Add 2 slices of cheese and mix. Let the cheese melt, add more milk to balance the consistency of sauce. • Note – You can grate processed or add mozzarella cheese also. • Add boiled pasta to the sauce. Add sautéed veggies and chicken as well. Mix up everything well on a low flame. • Note – if you find your pasta too thick, heat and add some more milk. • Garnish with grated cheese and serve.
