Ingredients
1 Tbsp Hung Curd
1 Tsp Ginger Garlic Paste
3-4 Green Chillies Crushed
1/2 Tsp White Pepper Powder
Salt to Taste
2 Pinches Of Saffron Soaked in 1 Tbsp Water
1 Tbsp Fresh Cream
1/2 Tsp Cardamom Powder
1/2 Tsp Chaat Masala
250 gms Boneless Chicken Piece of Hot Coal Ghee
1 Tbsp Oil
1/2 Tbsp Butter
1/2 Tbsp All Purpose Flour
125 ml Milk
Salt to Taste
Pinch of Black Pepper Powder
1/4th Cup Cheese
Sprinkle with Mixed Herbs & Chilli Flakes
Garnish with Coriander Leaves
Steps
1. For Marinating-In a large bowl, take Hung Curd, Ginger Garlic Paste, Green Chillies Crushed, White Pepper Powder, Salt, Saffron Soaked Water, Fresh Cream, Cardamom Powder and Chaat Masala. Mix everything well.
2. Meanwhile heat the coal and add 250gms Chicken in the curd mixture. Mix everything so that all the spices are well combined with chicken.
3. Make a well in the centre of the chicken mixture, by pushing a glass or steel cup into it. Place the hot coal inside the cup. Pour a spoon of ghee on the coal. It will begin to smoke. Immediately cover the bowl with the lid for 5 minutes. Now the mixture will have a smoked tandoori flavor.
4. Open the lid and remove the cup. Keep the chicken for 1 hour in the fridge to set.
5. In a pan take 1Tbsp Oil. Once the oil is heated add marinated chicken and cook on high flame for 2 minutes. Now cover the pan with lid and let it cook for 10 minutes on low flame. Keep checking the chicken occasionally so that it does not burn.
6. For White Sauce- Put Butter in a pan add ½ tbsp Butter and ½ tbsp All Purpose Flour and roast it for 2 minutes. Now add 125 ml Milk while keeping the flame low. While adding the milk keep stirring continuously so that no lumps are form and make sure the flame is low too. As the mixture consistency turns thick off the flame.
7. Add Salt and Pinch of Black Pepper Powder in the white sauce. Once the chicken is cooked, adjust the flame to high and grill the chicken till it gets slightly brown spots.
8. Pour the white sauce on the chicken add grated cheese, Sprinkle Mixed Herbs & Chilli Flakes. Now on the flame and keep it low. Cover the pan with the lid and let it cook for 2-3 minutes.
