Shanghai Fried Rice Recipe an Indo Chinese version of Chinese fried rice with noodles.

Shanghai Fried Rice
Ingredients
• For chicken :
250 gms boneless chicken (cut in cubes)
1 tsp ginger garlic paste
1 tsp red chilli powder
Salt to taste
1 tsp corn flour
1 egg white
• For rice:
3 tbsp oil
2 tbsp ginger garlic chopped
Spring onion whites
1/4th cup cabbage
carrot and capsicum
2 eggs scrambled
1 tsp soya sauce
1 tsp vinegar
1 tsp sugar
3 tsp kashmiri red chilli powder
Salt to taste
2 cup boiled noodles
2 cup boiled rice (cooked atleast 2 hours beforehand with some salt and oil)

Steps
1. To begin with the chicken marination, take the chicken in a bowl. Into that add ginger garlic paste, red chilli powder, salt, cornflour and one egg white. Mix until well combined. Set aside to marinate for half an hour.
2. In a pan, heat 1 tbsp oil. Toss in the marinated chicken and sauté it on high flame for 8-10 mins.
3. To prepare the rice, take 3 tbsp oil in a kadhai. Add in chopped ginger garlic and stir around on high flame for a minute.
4. Next, add in the spring onion whites, cabbage, carrot and capsicum. Stir and fry on high flame for a minute after adding each of these ingredients. (do not over cook these vegetables. We need them to remain crunchy.)
5. Keep aside some of the sautéed chicken for garnishing. Add the rest into the vegetables and stir around for half a minute.
6. Scramble two eggs. Keeping aside some for garnishing, add the remaining into the chicken and the vegetables. Sauté them well
7. For the condiments, add in soya sauce, vinegar, sugar, salt and Kashmiri red chilli powder. Stir and sauté these ingredients on a high flame.
8. Toss in the boiled noodles, the boiled rice and some spring onions. Stir and mix well on high flame. Serve.
