Egg Tawa Pulao…As the name says, this pulao Is made in tawa (pan). The regular egg burji and rice is mixed to give a flavourful rice. This is also a good way to use left over egg burji. It is another ideal lunch box dish too ?
We have added capsicum, which gives good crunch. However, you can skip or add other vegetables like carrots, peas etc.

Ingredients
4 Eggs
1-2 tablespoon Oil
1 teaspoon Cumin Seeds
2 Dried Red Chillies
1 teaspoon chopped Garlic
1 medium size sliced Onion
1 teaspoon Ginger Garlic Paste
1 medium size sliced Tomato
1 teaspoon Kashmiri Red Chilli Powder
1/4th teaspoon Turmeric powder
2 teaspoon Coriander Powder
Half teaspoon Cumin Powder
1 teaspoon Salt
1/3rd cup chopped Red and Green Capsicum
Fresh Coriander
200 grams Basmati Rice
Half teaspoon Garam Masala Powder
A little Oil
A Pinch of Red Chilli Powder
A Pinch of Salt
A Pinch of Turmeric Powder
Steps
Break 2 eggs and whisk them.
Heat 1-2 tbsp oil in a heavy bottom kadai or pot, add 1 tsp cumin seeds, 2 dried red chillies, 1 tsp chopped garlic, 1 medium size sliced onion.
Fry the onions till golden brown then add 1 tsp ginger garlic paste, sauté for a minute, then add 1 medium size sliced tomato fry it for 2 minutes.
Then add 1 tsp Kashmiri red chilli powder, 1/4th tsp turmeric powder, 2 tsp coriander powder, half tsp cumin powder, 1 tsp salt, add a little water, then fry all the spices for 2 minutes.
Then add 1/3rd cup chopped red and green capsicum, fresh chopped coriander leaves. Then add the whisked eggs, cook on low flame by mixing it for 2 minutes till eggs are cooked.
Soak 200 grams basmati rice and boil them by adding salt and little turmeric powder till 100 % cooked.
Strain the cooked basmati rice. Now add the cooked basmati rice to the egg mixture, then add half tsp garam masala powder, some chopped coriander leaves, 1 tbsp water and toss the rice with the spices to mix it properly.
Mix it well on high flame for 2 to 3 minutes, till all the rice is well coated with the eggs and spices. When done off the flame.
Boil 2 eggs and cut them into 2 pieces
In a pan heat a little oil, add a pinch of red chilli powder, a pinch of salt, a pinch of turmeric powder, then fry the boiled eggs in this oil on both sides by turning it.
Remove them from the oil and place it on the cooked Anda Tawa Pulao.
Serve it with a side of raita or a squeeze of lemon for an irresistible meal that will leave everyone asking for seconds!

Tips *Adjust Chilli according to your taste. *You can use more eggs if you prefer. * Do not fry the boiled eggs for a long time or it may turn hard. *Serve it immediately after cooking.
