Ingredients
100 gms Gram flour
1 Tsp Chilli Flakes
1/4th Tsp Carom Seeds
2 Green Chillies
Salt to taste
2 Tsp Crushed Coriander Seeds
Pinch Of Turmeric Powder
Water As Required
1 Cup Curd
1/4th Cup Gram Flour
1 Tsp Turmeric Powder
1/2 Tsp Red Chilli Powder
4 Cup Water
3 Tbsp Oil
1/2 Tsp Mustard Seeds
1/2 Tsp Cumin
3 Green Chilli Slits
4 Dried Red Chillies
10-15 Curry Leaves
Pinch Of Asafoetida(Hing)
1 Tbsp Garlic
1 Onion
Water If Required
Coriander Leaves
1 Onion
Pinch Of Baking Soda
Steps
1. For Pakora batter- In a bowl take 100gms Gram flour add Chilli Flakes, Carom Seeds, chopped Green Chillies, Salt, crushed Coriander seeds and a pinch of Turmeric Powder.
2. Mix everything well and add water little by little. Make a free flowing batter neither too thick nor watery. Cover and keep it aside for 15-20 minutes.
3. For Kadi- In a bowl take 1 cup Curd,1/4th cup Gram Flour, Turmeric Powder and Red Chilli Powder. Beat all the ingredients well for 1-2 minutes. Add 4 cup Water in the batter and whisk it properly so the no lumps are formed.
4. In a pan heat 3Tbsp Oil put Mustard seeds, Cumin, Green Chilli slits and Dried Red Chillies. Fry everything for a minute on low flame.
5. Put Curry Leaves, Pinch of Asafoetida (Hing) and chopped Garlic. Saute it for a while. Add chopped Onion and sauté until golden in color.
6. Pour the curd batter in the tempering and keep stirring so that no lumps are formed and let it boil (Whisk the batter once before pouring).Cook it for 15-20 minutes on low flame.
7. Meanwhile we have heated oil for frying. From the pan take 1Tsp hot oil and put it in the pakora batter. Whisk it well in one direction for 2-3 minutes. If the batter is thick add little water in it.
8. Add chopped Coriander Leaves, Onion and Pinch of Baking Soda in the batter. Mix it well.
9. Take a small portion from the batter and drop it in the oil. Fry the Pakoras on medium flame.
10. When one side is cooked and light golden in color, flip and fry the other side. Remove the Pakoras in a slotted spoon and drain them on kitchen paper towels.
11. After 15 minutes the Curry is cooked properly and do not keep the consistency thick. Add salt in the Curry and off the flame.
12. Put the Pakoras in the Curry while serving. Enjoy Hot and tangy Kadi Pakoras with Rice.
