Urad means black gram or black lentils. Bajra is millet. This is combination has lots of benefits.

Urad ki Dal and Bajre ki Roti
Ingredients
• 3/4th cup or 150gm split black gram
• 600ml water
• salt to taste
• 1 tsp ginger garlic paste
• 2 crushed green chillies
• 1/4th tsp turmeric powder
• 1 - 2 tsp oil
• 2 cup pearl millet flour
• salt to taste
• hot water
• 1 cup curd with 1/2 cup water (whisked together)
• 2 tbsp oil
• 1 tsp whole cumin
• 2 dried red chillies
• 1 tbsp chopped garlic
• 1 chopped onion
• ghee
Steps
1. In a pressure cooker, add in split black gram with 600 ml water. Also put in salt, ginger garlic paste, crushed green chillies and turmeric powder.
2. Turn on the flame and mix everything well. Add in 1-2 tsp oil. Cover the lid and pressure cook until two whistles
3. In a bowl, take 2 cups of millet flour. Add in salt to taste.
4. Knead the millet flour with hot water, adding the water gradually and mixing as you pour. Knead the dough well for 4-5 minutes.
5. Heat a pan on the stove. To make rotis with the dough, make dough balls and with the help of some loose flour roll out the chapatis with the palm of your hands. (try and make the rotis thin)
6. On the heated pan, flip the side which you rolled out with the palm of your hands. On the other side, brush with some water.
7. Cook the roti on both sides on high flame. Lower the flame and let it puff up.
8. We will now check on the dal. If its done, we will pour in the whisked curd and water. Whisk the entire mixture well.
9. For the tadka, heat some oil in a pan. With the flame on high, add in whole cumin, dried red chillies and chopped garlic. Stir and mix. Then add in chopped onions and cook till onions turn golden.
10. Pour in the prepared dal and bring the mixture to a boil
11. Let it cook on low flame for 5-7 mins.
12. Garnish with coriander leaves and turn off the flame
13. To serve, break the prepared rotis in small pieces in a deep bowl. Pour over it the prepared dal. Finally add some ghee for enhanced taste.
14. Sprinkle some fresh coriander and serve with some onions.
