Vegetable Uttapam Recipe
Ingredients
1/2 Cup Curd
1/2 Cup Water
1 Cup Semolina (170gms)
Salt to Taste
1-2Tsp Oil
2Tsp Chopped Ginger Garlic
1 Chopped Onion
1/4th Cup Carrot
1/4th Cup Capsicum
1 Green Chilli Chopped
1/2Tsp Red Chilli Powder
Salt to Taste
1Tbsp Green Spring Onions
Coriander Leaves
Chilli Fakes
100ml Water
Pinch of Baking Powder
Steps
1. In a large bowl, put Curd and Water stir it properly. Add a cup of Semolina (170gms) and salt as per taste mix well adjusting consistency. Now cover the batter with the lid for 15 to 20 minutes.
2. In a Pan put 1-2Tsp Oil. When the oil is heated, put chopped Ginger and Garlic, sauté it for a minute. Now add chopped Onion and chopped Carrot, again sauté it for 1- 2 minutes on medium flame until it turns soft.
3. Add Capsicum, chopped Green Chilli and sauté it for a minute.
4. Add Red Chilli Powder, pinch of Salt, Green Spring Onions (Optional), Coriander Leaves and mix everything well for a minute.
5. Now add this mixture in the batter that was kept aside and few Chilli Flakes for the flavour.
6. Mix everything well and add 100ml water, the consistency of the batter need to be thick yet watery. Lastly add Baking Powder (add only at the time of frying the Uttapam).
7. Heat non-stick pan put oil and pour the batter in round shape. Keep it on medium flame. When one side turns Golden brown, flip and fry the other side.
8. Serve hot and tasty Vegetable Uttapam with Green Coconut Chutney.
